3 Homemade Barbecue Rubs To Keep On Hand

Most barbecued foods are most delicious when prepared with a rub. You apply the rub a few hours before you cook the meat, and it imparts deep-down flavor. When you then barbecue the meat, the rub turns into a crust or coating on the outside, giving the meat a better texture. There are numerous pre-made rubs on the market that work wonderfully on everything from steaks to chicken quarters, but if you prefer to make your own, here are a few recipes to get you started.

Classic BBQ Rub

When you think of barbecue, what comes to mind is probably a blend of sweet, spicy, and tangy flavors. This rub gives off just that vibe. You can use it on chicken, pork butt, or even brisket, although it's a bit too heavy for fish or seafood.

Ingredients:

  • 2 tablespoons onion powder
  • 2 tablespoons garlic powder
  • 2 tablespoons smokey paprika
  • 1 teaspoon cayenne pepper
  • 1/4 cup brown sugar
  • 1 teaspoon citric acid powder
  • 1 teaspoon black pepper
  • 1 teaspoon seasoned salt

Mix everything together, making sure to distribute the brown sugar well. Store in a sealed jar until ready to use. This one is best applied about a half hour before the meat goes on the grill.

Lime Pepper Rub

This rub is a bit lighter than your traditional barbecue rub. It has spice and a nice citrus zing, and it's delicious on chicken, fish, and pork.

Ingredients:

  • 2 tablespoons dehydrated lime zest
  • 1 tablespoon onion powder
  • 1 tablespoon ground black pepper
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon parsley

Combine the ingredients, and use sparingly. You can apply this rub to meat up to three hours before cooking. Store any extra in a sealed jar.

Zesty Ranch Barbecue

If you love ranch dressing as much as you love barbecue sauce, then this rub is for you. It gives the meat that rich, ranch-like tang, but it's also sweet and smoky. It's especially delicious on ribs and chicken.

Ingredients:

  • 1 packet dried ranch dressing mix
  • 1 teaspoon brown sugar
  • 1 teaspoon cayenne pepper
  • 1 tablespoon paprika
  • 1/2 teaspoon lemon pepper seasoning
  • 1/2 teaspoon dried lemon zest

Mix everything together, and apply liberally to your favorite cuts of meat about 2 hours before grilling. Collect the drippings from the meat as you grill it; they make an excellent pan sauce if you heat them on the stove and add a little chicken stock. Enjoy.
