But sometimes, you may find yourself with extra iced tea to use up in a hurry. Throwing it away would be a shame, so instead, you may want to make one or more of these big-batch cocktails. Mix up a batch, keep it in a big pitcher behind the bar, and serve it as a happy hour special! Here are a couple of easy, big-batch cocktail recipes to use up your iced tea.

Raspberry Chiller

This one is perfect for a summer day! If you don't have fresh raspberries on hand, you can easily substitute frozen ones. To make about 2 gallons of the cocktail, you need:

  • 1 gallon prepared iced tea
  • 1 liter of raspberry vodka
  • 2 liters lemon-lime soda
  • 2 cups fresh raspberries
  • 2 tablespoons bitters
  • 1 cup orange juice

Muddle the raspberries in the bottom of a large prep container. Pour in the remaining ingredients, and stir well. Fill pitchers, one at a time, with the prepared cocktail mixture as needed. Be careful not to add too much ice to the pitchers; you don't want to dilute the drink too much. Store the cocktail in the fridge, when possible, between services.

Lemon-Lime Iced Tea Runner

Lemon juice and iced tea are a classic combination. Throw some lime juice into the mixture, and you have something more unique. Then, add some rum, and you have about 2 gallons of this really refreshing, big-batch cocktail. Here are the ingredients:

  • 1 1/2 gallons iced tea
  • 1 liter light rum
  • 1 cup lemon juice
  • 1 cup lime juice
  • 1 cup simple syrup
  • 1/4 cup vermouth

Mix all of the ingredients in a big prep container. Fill a pitcher at a time, being careful not to add too much ice.

Peachy Keen

Those who love peaches and iced tea will adore this big-batch drink, which is made with peach liqueur and peach vodka for an extra punch. To make about 2 gallons, you need:

  • 1 1/2 gallons iced tea
  • 1 liter peach vodka
  • 1 liter peach liqueur or peach schnapps

Mix these three simple ingredients in a big prep container. Fill pitchers one at a time, as needed. Garnish the glasses with peach slices for an extra touch.
